無蛋少油豆腐scone

在Facebook 的 Mama Days 看到這個免炸豆腐都甩食譜,材料做法都非常簡單,因為沒有黃豆粉所以我這個更簡單!但由於成份太簡單,我怕弄了舊石頭出來所以不敢減糖。甜,小朋友當然沒有抗拒。

下次可以試下同小朋友一齊整!

Original Recipe:
揚げずに&豆腐でヘルシー!豆腐ドーナツ



Ingredients:

114g 新生農舍豆腐
30g organic cake flour
70g organic bread flour
4g baking powder
20g coconut sugar

rice bran oil

black sesame (optional)

Method:

Add all the ingredients into a mixing bowl.
Knead it my hand. The dough is not very sticky and it is quite easy to knead.
Rub a little bit of rice bran oil on the hands. 
Divide the dough into four.  Shape the each small dough into a donut shape.
Bake at 170C, fan on, for 15 min.

少油果醬蒸蛋糕

在雜誌看到豆乳蒸しパン食譜,油的用量比之前試做的抹茶蒸蛋糕少,相對較健康。因為沒有打豆漿所以用全脂奶取代,做出來的蛋糕很軟熟濕潤,熱食好味,放涼了也不錯!不過不知道蒸蛋糕可否像焗蛋糕一樣包好放冰箱冷藏 (frozen),所以一日食哂!



Preparation time: 5 minutes
Cooking time: 12 minutes

Ingredients: (8 small cakes)
A:
120g cake flour
1 tsp baking powder 

B:
1 egg
2 tbsp 三盆糖
125ml milk
2 tsp extra virgin olive oil

C:
Berry Jam

Methods:

Sift cake flour and baking powder into a bowl.
Whisk ingredients B in a mixing bowl.
Add flour into the egg mixture and whisk to combine.
Spoon the batter into muffin cup.
Add 1/2 tsp jam to each cup and draw a swirl by chopstick.
Stream at 2000W, uncovered, for 6 min.  Turn to low heat and cover the lid, stream for another 6 min. (Wrap the lid by kitchen towel)

無蛋藍莓香蕉鬆餅 Eggless Blueberry Banana Spelt Muffins

Original Recipe:
Blissful Blueberry Banana Spelt Muffins (vegan + refined sugar-free)

參考Oh She Grows 的食譜做了無加蛋的Muffin,做了兩次都成功!

Ingredients:

A:
2 mashed ripe banana
3/4 cup + 2 tbsp whole fat milk
1 tsp apple cider vinegar
1/4 cup maple syrup
1 tsp pure vanilla extract
4 tbsp coconut oil, melted

B:
2 cups white spelt flour
3 tbsp coconut sugar
2 tsp baking powder
1/2 tsp sea salt

C:
1/2 cup walnut halves, chopped (optional)
1 cup frozen blueberries



Method:

Preheat oven to 180C fan on.
Mash the banana and mix all the ingredients A in a bowl.
Mix dry ingredients B in a mixing bowl.
Add banana mixture into the dry ingredients.
Gently fold in walnuts and blueberries (do not overmix).
Spoon to muffin cups.
Bake for about 20-25 minutes.

脆卜卜 Granola

脆卜卜 Granola

Preparation time: 10 minutes
Cooking time: 30 minutes

Ingredients:

4 cup rolled oats
1 cup chopped mixed nuts (by Vitamix, on and off to chop into small pieces)
4 tbsp coconut oil
5 tbsp maple syrup
A pinch of pink Himalayan salt
1 cup coconut flake 

optional:
chia seed
dried fruits

Method:
1. Preheat oven to 180C.
2. Mix everything together and place on a cookie sheet.  
3. Baked for 10 minutes then remove from the oven and stir then bake again. Remove and stir again every 5 minutes until all it turns golden.
4. Add chia seed and dried fruits after baking.

紫蘇火雞漢堡

紫蘇火雞漢堡
Shiso Turkey Burger

Ingredients:

200-250g ground turkey thigh
5g shiso leaves, cut into slices
5 brunches of spring onion, chopped
1/2 tbsp sesame oil
1/2 tbsp miso
Method:

1. Mix all ingredients together by hand and knead until sticky
2. Shape into a ball shape and pan fried them!

紅豆蒸蛋糕 / 抹茶紅豆蒸蛋糕
Simple Red Bean Steamed Cake and Matcha Red Bean Steamed Cake

Preparation time:10 minutes
Cooking time: 10 minutes







Ingredients:  (4 cakes)

A:
66g cake flour
1 tsp baking powder

B:
1 egg
2 tsp coconut sugar
2 tbsp milk
1 tbsp rice bran oil

C:
2 tbsp red bean paste (homemade)

D:
1/2 tsp matcha powder


Method:
1. Sift cake flour and baking powder into a mixing bowl
2. Mix egg, coconut sugar and oil in another bowl
3. Add the egg mixture into the mixing bowl and mix to just combine.
4. Add the red bean paste and fold to combine.
5. Fill in 2 silicone cups.
6. Add 1/2 tsp green tea powder into the remaining mixture and fold to combine
7. Fill in another 2 cups.
8. Stream at medium-low heat (1200W) for 10 min and done!
