無蛋藍莓香蕉鬆餅 Eggless Blueberry Banana Spelt Muffins

Original Recipe:
Blissful Blueberry Banana Spelt Muffins (vegan + refined sugar-free)

參考Oh She Grows 的食譜做了無加蛋的Muffin,做了兩次都成功!

Ingredients:

A:
2 mashed ripe banana
3/4 cup + 2 tbsp whole fat milk
1 tsp apple cider vinegar
1/4 cup maple syrup
1 tsp pure vanilla extract
4 tbsp coconut oil, melted

B:
2 cups white spelt flour
3 tbsp coconut sugar
2 tsp baking powder
1/2 tsp sea salt

C:
1/2 cup walnut halves, chopped (optional)
1 cup frozen blueberries



Method:

Preheat oven to 180C fan on.
Mash the banana and mix all the ingredients A in a bowl.
Mix dry ingredients B in a mixing bowl.
Add banana mixture into the dry ingredients.
Gently fold in walnuts and blueberries (do not overmix).
Spoon to muffin cups.
Bake for about 20-25 minutes.
